Let me tell you a little story about my first few experiences with coffee makers and this will show you why the Gevalia coffee machine is the best. So, when I first moved out of my parents house I decided I better start drinking coffee because that is what working adults do or at least that is what I thought. I had a lot of things to purchase for my new apartment and I had just received my first paycheck for around $700. I thought I was rich.

I thought I was going to have to wait 2 weeks till I was paid again to get a new coffee machine.

When I started drinking coffee, it wouldn't have mattered if it was instant or brewed, where the beans were from, how it was roasted, or flavoured, as long as it kept me awake and helped me pass my exams.

However as time passed I became aware of the different beans, roasts and flavours available. So when your palate reaches this stage of awareness and you no longer say coffee is all the same as long as it keeps me awake, how do you choose the right coffee bean?

First, choose which species you prefer, 75% of the worlds coffee trade is of Coffee Arabica due to its generally preferred flavour and deep aroma and it does go well with cream, sugar and other additives. But for the true coffee connoisseur it doesn't hurt to sample any of the other available species, such as benghalensis, canephor, congensis and mogeneti to name a few.

Now assuming you don't roast your own beans (as some of us do!) its important to choose the best roast. This is determined by the degree of darkness and there are four main types; Light (Cinnamon Roast, Half City, New England), Medium (Full City, American, Regular, Breakfast Brown), Dark ( High, Viennese, Italian Expresso, Continental) and Darkest (Italian, French, Spanish). Most people prefer medium roast due to its balanced flavour and sweetness, but do try the others as individual tastes often vary considerably.

As for the origin of the beans, the differences in flavours are small but significant. Beans from Central America and Hawaii have a snappy and vibrant flavour, Whereas beans from Yemen and East Africa are more bitter and Indonesian grown beans have a more complex flavour.

In addition to the natural flavours within the different coffee beans, different flavours can be added by the manufacturer, these are many and varied, but to begin with I would suggest trying beans without added flavourings for two reasons. Firstly particularly with artificial flavourings this might overpower the natural taste of the bean and prevent an unbiased choice of coffee bean and secondly the more the beans are flavoured the unheathier they become!

As for where to purchase your coffee beans, while your local supermarket will most likely stock some of the most popular varieties, probably the best place to find a large range of interesting and desirable flavours is the internet. You will also receive the beans fresh and full of flavour unlike those at the local store which may have been in storage for some time.

Another good option which I would recommend is to join a coffee of the month club. For a low price you get to sample one or more coffee bean flavours each month and also can discuss different flavours with other members.

Finding a delicious coffee bean isn't easy but once you have you can enjoy the fruits of your labour as often as you like!

The Good, the Bad, and the Ugly of Coffee Consumption

Coffee is heavily studied, but study results contradict one another. If science says that it is bad for you today, wait a day or two and another study will be published claiming the exact opposite findings.

The Good:

Coffee has had its medicinal purposes. My own ancestors used it to treat asthma. Certain chemicals in coffee have even be proven effective at stimulating bronchial dilation of people previously diagnosed with specific types of asthma. Some modern day asthma medications are even made from chemicals in the caffeine family.

Newly published findings suggest that men drinking caffeinated beverages, including coffee, have as much as a 3 to 6 times lower risk of developing Parkinson's disease.

The caffeine in coffee increases your metabolic rate, making weight loss faster and easier. It has also been associated with a reduced risk of suicide in women.

The Bad:

Women who drink more than one cup a day of decaf are considered at a much higher risk of developing rheumatoid arthritis. The theory is that the chemically decaffeinated products are causing the increased risk of autoimmunity. If you are going to drink decaffeinated coffee anyway, be sure that it uses a non-chemical based method.

Those at risk of heart disease and stroke should avoid coffee. Drinking coffee interferes with your body's ability to keep homocysteine and cholesterol levels in check and can increase blood pressure. (According to a study done in the Netherlands, this is true even if the coffee is filtered.) Raised levels of homocysteine are as a factor in the development of cardiovascular disease. Australian researchers found drinking coffee has potentially harmful effects on blood vessels. The caffeine may cause a loss of aortic elasticity, the main artery supplying blood to the body.

The findings are disputed by the coffee industry and some studies, but it also appears to be associated with an increased risk for breast and endometrial cancer. This is due to an increase in estrogen levels.

Studies have also shown that caffeine in coffee can raise levels of stress hormones and can lead to heart palpitations, jitters, and nervousness. People with panic or anxiety disorders can be especially sensitive to the caffeine in coffee. Even in small amounts, the stimulant can exacerbate their symptoms.

Pregnant and nursing women should never drink coffee. Caffeine is a stimulant drug that easily passes through the placenta to the developing fetus and is also transferred through breast milk. There are a myriad of reasons to love Austin TX, with ACL and SXSW, Sixth Street, Hyde Park, Zilker Park, Lake Austin, beautiful hill country, thrift and novelty shops galore and Guadalupe St. it is difficult to pick out just one reason why Austin is awesome. Though for me, my love for Austin directly comes from the café's and coffee shops. On top of hundreds of reasons to simply love Austin there are hundreds of coffee houses as well, but I am just going to tell you about the best.

First and foremost is Halcyon. Halcyon isn't your grandma's coffee shop; it is a bar and a lounge, a great place for lunch, or a great cappuccino and with an attached cigar/smoke shop it becomes difficult to find a reason to ever leave Halcyon. Awesomely located downtown on west 4th just across the street from Oilcan Harry's makes Halcyon the perfect place to wind down with some coffee and a cigar after a night full of dancing and drag shows!

If you want your coffee a little more low key, nothing and nowhere beats Dolce Vita! A little further north in the always cool Hyde Park on Duvall near 43rd sits this little refuge full of amazing espressos and fantastic gelato. Dolce Vita falls short on outside seating so smokers may have to fight for a spot but inside is roomy and comfortable with tables, chairs, couches and divided rooms. Happy hour starts at 4pm and with an incredible selection of international wines, free internet and a pretty good menu Dolce Vita can easily consume your entire Saturday.

If you are more of a coffee-with-my-studies kind of guy then Mozart's is the place for you. The opposite of Dolce Vita, Mozart's has an abundance of outdoor space spread out on multi-level decks overlooking the hills on Lake Austin with fewer seats indoors (though still adequate). Not only does Mozart's have a wide variety of imported coffees it is also one of the best bakeries in Austin and the view from the enormous deck is unbeatable. Mozart's might be a little more out of the way on Lake Austin Blvd but you will never have to fight for a seat, the atmosphere is calm and perfect for studying and the cheese cake gives New York a run for its money. With a place like Mozart's around there is never a good reason to go to a Starbucks.

Cleaning Coffee Makers

Cleaning your coffee maker is necessary to keep your machine producing great tasting coffee. Each machine type will require a different cleaning method.

Drip Filter

The Drip Filter brewer is very easy to clean. Just follow these 6 simply steps:

1. Dissolve 1 oz of citric acid in 4 cups of hot water.

2. Add 4 cups of cold water to the solution and pour the solution into the water chamber.

3. Turn on your coffee maker (without the filter) and let about half of the water solution run through the machine.

4. Stop the machine and let it sit for 15 minutes.

5. Start it up again, and let the rest of the cleaning solution run through the machine.

6. Rinse everything out by running 8 cups of cold fresh water through your machine at least 4 times.

French Press or Plunger

The French Press brewer is a snap to clean. Simply remove the plunger and empty the spent coffee into a rubbish bin. Use soapy water to clean the plunger and the glass jug.
Make sure all parts are rinsed well (ensure no soapy residue remains). Then allow all the components to air dry.

Espresso Machines

To clean an Espresso machine just follow these steps:

1. Remove the group handle from the espresso machine and empty the coffee puck into a rubbish bin. Rinse the group handle with warm water.

2. Pour your chosen cleaning solution into the filter basket in the group handle. With your espresso machine ready to brew, put the group handle in the espresso machine just like you were going to brew some coffee.

3. With a bowl under the group handle, start the machine and begin pulling the 'shots'.

4. Leave the machine on for about five seconds. Then stop for ten seconds, then on again for five seconds. Repeat this process another six times.

5. Now remove the group handle from the machine and rinse with warm water.

6. Turn your machine on without the group handle in. This will fully rinse the group itself.

7. Now using the brush for your espresso machine, clean any residue from under the brewing group. Once complete, turn it on to give the group head another rinse.

Moka Pots

To clean a Moka pot is easy to clean. Just dismantle the Moka pot and rinse in warm water. Do not put the Moka pot in the dishwasher as it will discolor the pot.

Beauty and the Bean

Back in the mid-80s (yikes, was it really 20 years ago?), I was a young teacher working in New Orleans. To earn extra money, I worked part time across the street from my Magazine Street apartment, at PJ's Coffee and Tea. Having grown up on instant Maxwell House, I was not the most coffee-savvy drinker in the world.

In the days before Starbucks, before coffee houses became trendy and common, I learned the basics about roasting coffee beans and serving coffee from experts. I learned about coffee's origins, roasting methods, and how to prepare the ultimate cup. In my opinion, the best cup of coffee can only be made with a French press, a glass carafe in which you mix ground coffee, boiling water, and use a simple plunger-press device to push the grounds to the bottom when you want to serve the coffee. This is the best way to make coffee because you don't "cook" the coffee as you would in a drip machine. Cooking coffee releases its acidity and makes it bitter. I was so in love with my French press, I used to bring it on camping trips. There's nothing quite like rolling out of your tent in the woods at dawn, wrapping your cold hands around a warm cup (not a paper cup, perish the thought!) and sipping slowly as you tend the fire for your morning breakfast.

I might also argue that the cold drip method is up there with the French press. This method produces a coffee concentrate that you can keep in your fridge, but it's slow and I believe best suited for iced coffee, which is how I learned it at PJs.

Don't get me wrong. I'm not anti-drip or anti-percolator. Heavens, no! For large scale convenience, there's nothing like machinery. I own a drip coffee maker and a Krups cappucino/espresso maker and use them frequently. When I'm bolting out the door in the morning, I fill my metal thermal mug (never plastic, ick!) with a dark, rich French roast. If it's a particularly good roast, I drink it black so as not to sully the flavor. If it's mediocre or I'm just in the mood for light coffee, I use Half-and-Half. No sugar in my coffee, thank you. My husband uses skim milk which upsets me to no end because it produces a grayish colored murky coffee I find unappealling. But hey, he likes it and as long as he knows never to use skim milk in MY coffee, we're cool.

Now about those flavored coffees...I often take flack for this, but let me say I am vehemently opposed to flavored coffee. Coffee IS a flavor, so adding additional flavor to it is like adding ice cubes and club soda to a pricey bottle of merlot. How would you possibly appreciate the personality of a bottle of wine if you added extra stuff to it? You'd change the entire personality of something elegant and simple and make it complicated and confusing. With coffee, as with many foods and drinks, simplicity is elegant.

Back in my coffee house days, we did not serve flavored coffees. We offered a dark roast, a medium roast, and a water-processed decaf to our customers along with an assortment of fresh baked goods, made from scratch by local bakers. We believed flavored coffees were just wrong because they covered up the true essence and beauty of the bean. Plus they weren't popular then. I know they are popular now. The rows of syrupy flavors in bottles lined up in some coffee bars are testimony to the popularity of flavored coffee. I'll pass, thank you.

To eat or not to eat with coffee? Again, keep it simple. Toast or an English muffin and a steaming cup of java comprise the ultimate breakfast. A medium roast in the afternoon with fresh biscotti is heaven. A demi-tasse of dark espresso with the tiniest slice of lemon rubbed around the edge of the cup allows me to linger and enjoy the afterglow of a perfect meal.

Ahhh, did I mention shortbread and coffee? Always appreciated, always appropriate, a wedge of Vermont Shortbread with your coffee is the ultimate in luxury and pampering. It's probably not something you'd eat every day, but for those times when you want to practice extra self-care, why not enjoy your coffee with the most elegant and simple of all cookies, shortbread?

When food and drink are pure, simple, and flavorful without being contrived, you will want to savor them slowly and purposefully. You will want to sit quietly with your steaming cup and your snack with your eyes gently closed and allow flavors, aroma, and warmth to dance their slow, sensual dance of comfort and nurturing. And guess what? The world feels a whole lot friendlier when you take the time to enjoy the simple beauty in your bean...or in whatever you're eating and drinking.

Espresso Coffee - How to Make an Excellent Espresso at Home

Espresso is strongly brewed coffee made by forcing steam and hot water
through darkly roasted and finely ground coffee beans. The aroma of
espresso makes it especially hard for many coffee lovers to resist.
Coffee aficionados the world over know that a shot of excellent
espresso is crucial to making a good cup of coffee. There are a
variety of espresso machines in the market that can produce great
tasting espresso.

So how do you make a great cup of espresso? Here are the basic steps:

1. Remove coffee ground residue of the previous shot in the shot
holder before using the espresso machine to make a new cup of
espresso.

2. Have adequate ground coffee ready and place it in the grinder hopper.

3. Release seven grams of the ground coffee into the shot holder,
making sure that you get a full pull as you do so.

4. Using a hand tamper, even out the coffee grounds. Tamp only once
and do not twist the tamper as you tamp the coffee grounds. By doing
this, you are assured that the hot water and steam will evenly extract
the coffee. You can also correctly gauge the pressure if you use a
hand held tamper to pack down the coffee grounds as well as remove
excess coffee grounds from the shot holder.

5. Secure the shot holder in place and lock the espresso machine
handle so that water does not leak as it passes through the coffee
grounds at a high pressure.

6. Position a warmed up espresso cup under the the espresso machine's
coffee holder spout. Start the espresso machine. Keep an eye on the
the color and consistency of the brew coming out of the spout. In 15
to 20 seconds, you should have about 1.5 ounces of freshly brewed
espresso in the cup.

Making a well-brewed cup of espresso does take time and practice. The
presence of a creamy honey-colored foam called crema that is about a
quarter of an inch thick sitting on the coffee's surface is a sign
that you have successfully made an excellent cup of espresso. And if a
teaspoon of sugar can rest on the crema, you can probably consider
yourself an espresso guru!

The crema is the result of several important factors: the coffee
blend, fineness of the coffee ground, extraction time, water
temperature and amount of coffee used. You achieve a perfect cup of
espresso every time if you can consistently attain an optimum mix of
these factors.

* Most espresso aficionados will agree that the coffee blend should
include some Robusta beans.

* Several reasons could account for a dark color of crema: too much
coffee grounds may have been used; the coffee grounds were packed too
hard and too tightly in the shot holder, resulting to a longer
extraction time of the coffee; the coffee grounds used was too fine;
or too much water was used.

* There are several reasons, too, for less crema: the coffee used may
not have been enough; the time it took to extract the coffee may have
been too short since the coffee used was coarsely ground; there was
not enough water to pass through the coffee; the coffee grounds were
packed too lightly in the shot holder; or the water that passed
through the coffee was not hot enough.

* If the espresso machine, shot holder or cup is cold, it may affect
the amount of crema produced.

Espresso can be served as it comes out of the espresso machine or it
can be served in a variety of ways. In fact, many of the specialty
coffee drinks today has espresso as their base. Some of the specialty
coffee drinks that have a shot of espresso include macchiato (espresso
topped with foamed milk), espresso con panna (espresso topped with
whipped cream), cappuccino (espresso with milk and foam), café latte
(espresso with milk, but without the foam), mocha (espresso blended
with milk and chocolate syrup) and Americano (a "weakened" espresso
made by adding warm water).

How To Make Cuban Espresso So you want to know how to make Cuban espresso? Great!  As you probably know, a Cuban espresso is an espresso that is sweetened with sugar as it is brewed (though other drinks have come be known as Cuban espresso).

The first thing you'll need to make a killer Cuban espresso is the right beans.  Aficionados swear by Cuban-style brands such as Bustelo, Pilon and La LLave, though any very dark, Columbian-style roast will work just fine.

Before you try making a Cuban espresso, you should learn how to make a regular espresso first.

So, here's how you make a Cuban espresso:

1.  Using an espresso machine, add the desired amount of finely ground coffee.

2.  For every demitasse (half) cup of espresso you want to make, use one teaspoon of sugar. The key to Cuban espresso is that it be very sweet. The trick is to put the sugar into the glass carafe before you brew the coffee.

3.  Brew the coffee just as you would an espresso. The coffee will pour over the sugar in the carafe as it brews. After it is finished filling the carafe, stir it briskly as there will still be a little undissolved sugar. Pour the coffee into several demitasse cups and enjoy.

As a note, for Cafe con Leche, simply use 2 parts Cuban Coffee to 1 part steamed milk.
